Pâté chinois

A Quebec classic, very similar to a shepherd's or cottage pie.

Growing up we ate Pâté chinois regularly. It’s very similar to a shepherd’s or cottage pie.

Preparation

Mashed potatoes:

  1. Peel the potatoes and cut into 1-inch cubes.
  2. Boil until fork tender.

Assembly:

  1. Dice the onion.
  2. Drain the corn.
  3. Brown the beef over medium-high heat.
  4. Cook the diced onion, then deglaze with water, chicken stock, or your favourite red wine.
  5. Once the potatoes are cooked, mash them with milk, butter, salt, and pepper to taste.
  6. Layer beef, then corn, then mashed potatoes, and bake until heated through and the top is golden.
