Pâté chinois
A Quebec classic, very similar to a shepherd's or cottage pie.

Growing up we ate Pâté chinois regularly. It’s very similar to a shepherd’s or cottage pie.
Preparation
Mashed potatoes:
- Peel the potatoes and cut into 1-inch cubes.
- Boil until fork tender.
Assembly:
- Dice the onion.
- Drain the corn.
- Brown the beef over medium-high heat.
- Cook the diced onion, then deglaze with water, chicken stock, or your favourite red wine.
- Once the potatoes are cooked, mash them with milk, butter, salt, and pepper to taste.
- Layer beef, then corn, then mashed potatoes, and bake until heated through and the top is golden.
