The basics of making a gravy for any occasion.

The roux quantities are sized for 1 cup of liquid — scale to however much gravy you need.

Preparation

A roux is the building block of a good gravy. There are much better guides on the internet, but here are the basics. Mikayla, from The Flour Handprint has an excellent guide.

  1. Start by making the roux. Equal parts flour and butter, cooked over medium heat until the desired colour is achieved.
  2. Mix the drippings/liquid into the roux, stirring constantly.
  3. Bring back to a boil and simmer for a few minutes, adding salt, pepper, and spices to taste. Make sure to taste as you go!
  4. Serve.
