Chili
A vegetable-forward chili with a touch of dark chocolate, based on Adam Ragusea's recipe.

Based on Adam Ragusea’s chili. The dark chocolate rounds out the acidity — don’t skip it.
Preparation
- Dice the peppers and onion and sauté until softened.
- Add the crushed tomatoes, beans, mushrooms (if using), and spices.
- Simmer until thickened, then stir in the dark chocolate chips until melted.
- Adjust the seasoning — lime juice and a splash of white wine vinegar to brighten it — and finish with chives.
